What to do with Zucchini's

Zucchini Casserole

This recipe had rave reviews from my family! For a slightly different flavor, try sauteing the zucchini, carrots, and onion together.

3-4 medium zucchini, sliced 1/2 inch thick or cubed
3/4 c. carrots, pared and sliced
water, salted
1/2 c. onion, chopped
6 T. butter, divided
1 package (or 2 1/4 c.) stuffing mix, divided
1 can cream of chicken soup
1 c. sour cream (I used milk)

Set 3/4 c. stuffing mix aside. Bring salted water to a boil. Add zucchini and carrots and simmer 15 minutes. Meanwhile, saute onion in 4 T. butter. Add cream of chicken soup and milk to onions. Stir remaining 1 1/2 c. stuffing mix into onions. Drain vegetables and add to onion mixture. Place in 9x13 pan. Melt 2 T. butter and add to stuffing mix which was set aside. Sprinkle over casserole and bake at 350 degrees for 20 minutes.

I'm sorry, I thought it was funny!

 has introduced a new flavor: " Barocky Road ." 

Barocky Road is a blend of half vanilla, half chocolate, and surrounded
by nuts and flakes.  The vanilla portion of the mix is not openly
advertised and usually denied as an ingredient. The nuts and flakes are
all very bitter and hard to swallow. 

The cost is $100.00 per scoop. 

When purchased it will be presented to you in a large beautiful cone,
but then the ice cream is taken away and given to the person in line
behind you. 

You are left with an empty wallet and no change, holding an empty cone
with no hope of getting any ice cream.

Valentine "Caution" Fundraiser

Jerlyn is on another accelerated softball team this year.  It is a team from Vernal, their name is the "Caution".  She will be playing in the 14 U league again and we are excited to be on a Vernal team, beats driving to Spanish Fork (3 hours away, one way) twice a week!! 

As a fund raiser the girls got Bee Haven, a floral shop, to sponsor them. In exchange for the sponsorship the girls had to stand on Main Street and hold up signs to promote the floral shop the day before Valentines Day. It wasn't to cold as you can see, and they were only out there for an hour and a half.  But I will tell you what, they got a lot of honks, and double looks!!  I swear there were several truck loads of guys that past by 4 or 5 times.   They had a lot of fun!!
