I wanted to put some pictures on here.  But I am just about finished with the Book of Mormon and I can't put it down!!  LOVE IT!!!  I learn so much each time I read it!!

Gratitude

What to do with Zucchini's

Zucchini Casserole

This recipe had rave reviews from my family! For a slightly different flavor, try sauteing the zucchini, carrots, and onion together.

3-4 medium zucchini, sliced 1/2 inch thick or cubed
3/4 c. carrots, pared and sliced
water, salted
1/2 c. onion, chopped
6 T. butter, divided
1 package (or 2 1/4 c.) stuffing mix, divided
1 can cream of chicken soup
1 c. sour cream (I used milk)

Set 3/4 c. stuffing mix aside. Bring salted water to a boil. Add zucchini and carrots and simmer 15 minutes. Meanwhile, saute onion in 4 T. butter. Add cream of chicken soup and milk to onions. Stir remaining 1 1/2 c. stuffing mix into onions. Drain vegetables and add to onion mixture. Place in 9x13 pan. Melt 2 T. butter and add to stuffing mix which was set aside. Sprinkle over casserole and bake at 350 degrees for 20 minutes.

24th weekend

This weekend we went camping up by East Park and had a really great time.  Jerlyn took Jadyn, Josh took Will Jackson, Shane Helms and Cody Perry.  So we definitely had a "Yukon" full.  The kids had a great time, we played a lot of "Texas Hold Em" and they ate me out of house and trailer! :)  But I loved it.  It rained a little bit and was a nice "break".

Jerlyn's Express Team went to the Triple Crown World Series in Park City the middle of July.  They played awesome and placed 7th which is really good.  A friend of Jerlyn's, Sammie Jackson, also went with another team from Ogden.  Jerlyn and Sammie where the only two girls from Vernal their age that played in the WS.  We had a lot of fun hanging out with the Jackson's in Heber in our spare time.  The Express played 3 California teams, 2 Arizona, 2 Utah and 1 Washington State team.   Grandma Linda helped me get her out there two of the four days, thanks Grandma!!  She had a great experience and made memories I am sure she will never forget.
